The spongata is a typical Christmas dessert spread in some areas of the provinces of Piacenza, Parma, Reggio Emilia, Modena, Massa-Carrara and La Spezia. It’s tradition dates very far back in time , and , some say it is of, Jewis origin.
A pastry case is filled with a kind of thick jam made from apples and pears, raisins, candied fruit and pine nuts, honey and spices ; and then covered with another layer of pastry.
